I = Incredible Invention!

Hello all and welcome to ‘I’ of my A-Z Challenge! It would have been all to easy to make ice-cream for my ‘I’ post so I thought I’d do something a little bit different! This recipe has a bit of a story and I’ve been waiting to post it for a ages as I created it specifically to join Angie at her Fiesta Friday… but I haven’t been around to be able to party on a Friday for ages so I’m very excited to join the party today! 🙂

Incredible Invention! Traffic Lights! Did you know that the first traffic light was actually installed in 1868 in the UK!!! 🙂 Ah well… it was gas operated and unfortunately after less than a month it exploded and seriously harmed the policeman who was operating it! 😦 Electric traffic lights didn’t appear until over 40 years later in the 1910’s in the USA! Traffic Lights are one of those things which we take for granted! Can you imagine what we would do without them? The other day they weren’t working (oh yes, I was in Istanbul and there was a nationwide blackout!) anyway, how very difficult was it for our taxi to edge forward bit by bit, then suddenly lurch forward into the path of an oncoming lorry! Traffic Lights… Incredible Invention! 🙂

Oh yes, this ‘is’ a recipe blog 😛 🙂 and my recipe today is ‘traffic light rosti’ 🙂 See! history and recipes! 🙂 Anyway, these did not start out as traffic lights but looking around the kitchen I suddenly thought ahhh beetroot, courgette, what else can I use and then I had to find something amber!

Hopefully you’ll see that the colours are traffic light esque! 🙂 Once you taste these! OMGosh! I started with green, then amber, then red and they are all so delicious but then I had this thought of stacking them and cutting all three together! WOW… definitely an ‘Incredible Invention’ !!! These flavours all together! Oh My Gosh!!! They are of course DEGF too! Dairy. Egg. Gluten. Free. 🙂 Incredible is the only word I have for them! 🙂

Gather

  • 1 teaspoon (5g) chia seeds
  • 3 teaspoons (15ml) water
  • 100g beetroot grated
  • 10g porridge oats (GF if required) blitzed to a flour
  • 1 teaspoon dill
  • 1/4 teaspoon salt (I used pink Himalayan)
  • 1/4 teaspoon black pepper
  • ————————————-
  • 1 teaspoon (5g) chia seeds
  • 3 teaspoons (15ml) water
  • 100g courgette grated
  • 25g porridge oats (GF if required) blitzed to a flour
  • 1 teaspoon dried mint
  • 1/4 teaspoon salt (I used pink Himalayan)
  • 1/4 teaspoon black pepper
  • ————————————
  • 1 teaspoon (5g) chia seeds
  • 3 teaspoons (15ml) water
  • 100g celeriac grated
  • 10g porridge oats (GF if required) blitzed to a flour
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon garlic granules
  • 1/4 teaspoon salt (I used pink Himalayan)
  • 1/4 teaspoon black pepper
  • ————————————–
  • coconut oil for cooking

Prepare

  1. Prepare three cups of chia seeds mixed with water for the three different rostis, stir well and leave for 10 minutes.
  2. Mix all the remaining ingredients for the beetroot rosti together (beetroot, oats, dill, salt, pepper).
  3. Prepare the courgette rosti ingredients (courgette, oats, mint, salt, pepper).
  4. Get the celeriac rosti ingredients mixed ready (celeriac, oats, curry, garlic, salt, pepper).
  5. Stir the softened chia into the vegetable mixes one at a time and combine well.
  6. Melt some coconut oil in a pan and shape the rostis into flat burger shapes using your hands. Shallow fry turning once or twice until cooked. Alternatively shape and place on a baking tray if you prefer not to fry.
  7. Keep warm in a low oven until you have cooked at least one of each flavour!
  8. Enjoy!

Serve & Store

  • Stack them and serve them!
  • Eat with salad or add your favourite grain.
  • Turn into a traffic light burger and eat with your choice of bread or wrap.
  • Store in the fridge for up to three days. These are delicious cold too!

  1. I actually like traffic lights. As a non-driver, I can appreciate them a lot, especially when crossing a wide street without one. Brrr, scary! 🙂
    Anyway, I looove your traffic light burgers! The colors are great and the taste… I bet it’s so complementing! 🙂

  3. Oh, you are just too creative! There’s something about this that makes me think of Dr. Seuss. And unlike Sam I am who will not eat his green eggs and ham, I will eat these traffic lights.         • Basically you edit your post to say you are sharing at FiestaFriday which is co-hosted by (me and Kaila this week). You then add a link to each of us (that’s three links) – so for me you would add the link from my current post or just generically my blog home page.
