Back to school day 😦 It always saddens me when the holidays end, more so this time as we had some great plans but then coughs and colds took over and we were stuck indoors. It’s not that we don’t have fun at home – we watched LOADS of films, played some board games, even built some lego (I forgot how much I love lego)! Then of course there was the baking! 😀 We had time to do more baking than usual and caught up on all the seasonal bakes such as mince pies, Christmas pudding, mincemeat slice, gingerbreads, even making some savoury crackers and for the first time ever homemade cranberry sauce! 🙂

I had a plan for today, but the weather put paid to that! There is a storm in the UK (storm Eleanor) at the minute and  besides all the school traffic, there are trees down and roads closed adding to the already congested roads. The winds are currently still about 50mph (80kmh) where we are, there are flood warnings in several parts of the country and power cuts to thousands of homes. Hopefully, everyone is okay and not too much damage has been suffered.

So time for more baking! This apple crumble slice is just perfect with a coffee as I sit inside in the warm, watching the leaves dancing in the wind and waiting for the end of the school day! 🙂  Serve it hot with a serving of ice cream, or eat it chilled with a dollop of coconut yogurt!

Ooo, if you’re planning an afternoon tea 😛 why not make these crumble slices, then add some caramel slices or a gorgeous chocolate pecan cheesecake, maybe some superfood cookies or tahini flapjack? Apple Crumble Slice (Vegan & Free-From)

  • Servings: 12-16 slices

Gather

  • 100g Plain gluten free flour
  • 50g ground almonds
  • 60g coconut oil
  • 1-2 tablespoons cold water
  • 2 large apples peeled, cored and sliced
  • 1 teaspoon cinnamon
  • 1 tablespoon maple syrup
  • 50g Plain gluten free flour
  • 50g ground almonds
  • 50g porridge oats (gluten free if required)
  • 50g coconut oil

Prepare

  1. Make a pastry: put the flour and almonds in a large bowl and rub in the oil until you have a mixture resembling breadcrumbs. Gradually add water until you have a dough which forms into a ball. Chill for fifteen minutes.
  2. Gently press the dough into a lined tin (about 20cm square) – you are aiming for about 0.5cm thick. Bake at Gas Mark 5 (375f / 190c) for 10 minutes until just changing colour.
  3. Scatter the apple pieces over the pastry, sprinkle with cinnamon and drizzle with maple syrup.
  4. Mix the last four ingredients together (flour, almonds, oats, oil) to make a crumble topping and use to cover the apples.
  5. Return to the oven and bake for a further 10-15 minutes until golden.
  6. Enjoy!

Serve & Store

  • Serve hot from the oven, on its own or maybe with ice cream.
  • Eat cold with a side of coconut yogurt.
  • Add whole fresh blueberries to the apples before adding the crumble.
  • Use up any leftover mincemeat at one end of the slice.
  • Try with pears or peaches, or a mixture.

  1. Happy New Year☺ These look like a good way of using up some apples I have, I’ve got my eye on those tahini flapjacks too (I’ve taken to eating tahini with a little fruit syrup- reminds me a bit of halva, yum). Take care in the storm! x

    • Happy New Year to you too Eva. Hope you had a great festive season. Aha… hubby mixes tahini with date syrup- something from home and eats it with bread! Thinking I might have to go out and rescue the fence!
