Coconut Dessert… Vegan & Free-From
Yum yum yum! 😛 Super fast dessert!!!
I suddenly realised that I’d been over zealous when buying tofu and I had a packet which needed eating! What did I do? I threw it in the blender with some coconut and some dates and tada! Instant vegan coconut whip! Delicious! I know nice cream is quick, but this needs no frozen bananas, no cooking and you can add fresh fruit or nut butter to it to mix up the flavours… nomnomnom!

Coconut Whip (Vegan & Free-From)
Gather
- 340g silken tofu
- 100g dates
- 50g desiccated coconut
- *optional extras/toppings as preferred (nut butter, fruit, sauce, coconut, nuts)
Prepare
- Put everything in the blender… blend until very smooth.
- Pour into glasses. Serve!
- Enjoy!
Serve & Store
- Layer with nut butter (I used almond).
- Add chopped sliced fresh fruit – strawberries, raspberries or mango would go well.
- Drizzle a fruit coulis in to make layers.
- Top with nuts, coconut or even chocolate.
- Chill in the fridge until required.
- Cover if storing to prevent the top drying out.
